Meatless Mondays: Black bean sliders

SOUTHFIELD, Mich. (WJBK) - The recipe for Black Bean sliders comes courtesy of Gus and Grey.

1 (16 ounce) can of black beans, drained and rinsed
½ red bell pepper
½ onion, cut into wedges
4 tablespoons of Gus and Grey “Hola Hola” (Smoked Garlic - Tomatillo Jam)
1 egg
1 tablespoon cayenne pepper (can substitute chili powder)
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce (can be omitted, if desired)
¾ cup bread crumbs

Directions:
*If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil.  If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.

*In a medium bowl, mash black beans with a fork (or potato masher) until thick and pasty.

*In a food processor, finely chop the bell pepper and onion, then stir into the black beans.

*In a small bowl, stir together the egg, chili powder, cumin and chili sauce.

*Stir the egg mixture into the mashed beans.  Mix in the Gus and Grey jam, and then mix in the bread crumbs until the mixture is sticky and holds together.  Divide into 12 patties.

*If grilling, place patties on foil, and grill about 8 minutes on each side.  If baking, place patties on baking sheet, and back about 10 minutes on each side.

Put on a bun with all of your favorite fixings, and enjoy!!
