Fox 46 Carolinas is bringing you reports from area bloggers and writers to help you discover new and fun things in the region. In this report, food writer Sarah Crosland takes us to Baku, a new Japanese robata grill and sushi restaurant in SouthPark.
Baku features a traditional robata grill, which is a long and narrow grill fired up with a special Asian charcoal that burns hotter than regular charcoal.
"We use traditional Japanese methods and cooking techniques but with our own unique take on the dishes," said Baku Executive Chef Michael Shortino.
Some examples of that are robata grilled tea-brined duck breast and a grilled quail that comes from a farm in Georgia.
"We try to use as much local ingredients as we can," Shortino said. "We get our microgreens and things like fresh peaches and corn from local farmers."
