George's Restaurant's Braised Boneless Short Ribs

(WJBK) -- Get this recipe courtesy of Chef Jerry Sanchez from George's Restaurant, formerly know as the Honey Tree in West Bloomfield.

½ stick of butter
2 carrots, sliced
1 onion, chopped
4 sticks celery, sliced
2 cloves of garlic, chopped
3 lb short ribs
1 teaspoon George's Restaurant Spice Blend (available at George's Restaurant)
¼ cup of flour
2 teaspoons tomato paste
1 teaspoon beef bouillon
1 cup water
Salt and pepper to taste

1. Melt butter in skillet or cast iron casserole.
2. Sprinkle George's Restaurant Spice Blend on short ribs. Brown them in the  butter then remove to a plate.
3. Saute the vegetables, add the flour and when it is golden, add the water, bouillon and tomato paste.
4. Bring to the boil to make a slightly thickened sauce, return short ribs to pan and add enough water to just cover the meat. Season to taste with salt and pepper.
5. Either transfer to a casserole dish or, if it's in a cast iron casserole, put in oven. Bake 2 hours, 350F, adding extra water if necessary.
